About Dragonne
Dragonne is a contemporary New York bistro opening in the West Village. Rooted in classical French technique with subtle Asian influence, the restaurant is designed to feel elegant yet deeply warm — grounded in hospitality, restraint, energy, and precision. The menu is seasonal and ingredient-driven, with a strong focus on seafood, vegetables, thoughtful saucework, and refined yet personal cooking. The dining experience is intended to feel intimate, alive, and emotionally resonant — balancing technical rigor with warmth and humanity. We are seeking experienced Servers to join our opening team and help establish the hospitality culture, service standards, and identity of Dragonne from the ground up.
About the Role
Servers at Dragonne are responsible for creating thoughtful, engaging, and memorable dining experiences through attentive service, genuine hospitality, and a strong understanding of food and beverage. This role requires professionalism, warmth, attention to detail, and the ability to anticipate guests' needs while maintaining a natural and confident presence on the floor. The ideal candidate is curious, personable, and deeply passionate about restaurants, food, wine, and hospitality. We value individuals who can balance the precision of fine dining with the personality and ease of a neighborhood bistro. We are looking for people who take their craft seriously without taking themselves too seriously — individuals who understand that exceptional service is as much about emotional intelligence, generosity, and awareness as it is about technical execution.
Responsibilities
Guest Experience & Hospitality
  • Deliver warm, attentive, and personalized service while maintaining the standards and identity of Dragonne.
  • Guide guests confidently through the menu, including ingredients, preparation techniques, and beverage pairings.
  • Anticipate guest needs and respond thoughtfully to individual preferences and requests.
  • Maintain an attentive yet unobtrusive presence, balancing professionalism with warmth and personality.
  • Create genuine connections with guests and help cultivate lasting relationships with the neighborhood and restaurant community.
Service Execution
  • Execute established service standards with consistency, precision, and attention to detail.
  • Maintain proper table maintenance, pacing, coursing, and communication throughout service.
  • Collaborate closely with the kitchen, bar, and fellow dining room team members to ensure a seamless guest experience.
  • Participate in daily preshift meetings, menu tastings, and ongoing food and beverage education.
  • Maintain dining room cleanliness, organization, and readiness before, during, and after service.
  • Demonstrate a strong sense of urgency, awareness, and composure in a fast-paced environment.
Food & Beverage Knowledge
  • Develop a thorough understanding of Dragonne's seasonal menu, culinary philosophy, and ingredients.
  • Build strong working knowledge of the wine, cocktail, and nonalcoholic beverage programs.
  • Communicate food and beverage offerings with clarity, enthusiasm, and confidence.
  • Remain curious and engaged in ongoing education, tastings, and professional development.
  • Make thoughtful recommendations that enhance the guest experience without feeling transactional.
Teamwork & Culture
  • Contribute to a collaborative environment rooted in respect, accountability, curiosity, and care.
  • Support fellow team members proactively and take ownership of the overall dining experience.
  • Communicate clearly and professionally with both front- and back-of-house teams.
  • Remain receptive to feedback and committed to continuous improvement.
  • Help establish the standards, traditions, and culture of Dragonne as a member of the opening team.
Qualifications
  • Genuine passion for hospitality, restaurants, food, and beverage.
  • Previous experience in an elevated, high-volume, or fine-dining restaurant strongly preferred.
  • Strong food and wine knowledge, with a desire to continue learning.
  • Excellent communication skills, emotional intelligence, and attention to detail.
  • Warm, confident, and engaging personality with a natural sense of hospitality.
  • Ability to remain composed, organized, and attentive under pressure.
  • Strong understanding of service etiquette, dining room fundamentals, and restaurant operations.
  • Collaborative mindset and willingness to support the team beyond individual responsibilities.
  • Familiarity with POS systems and restaurant service procedures.
  • Availability to work evenings, weekends, and holidays as required.
What We're Building
Dragonne is intended to feel timeless, intimate, and alive — a restaurant grounded in rigor without rigidity. We care deeply about atmosphere, rhythm, music, materiality, and emotional warmth just as much as technical execution.
Our approach to hospitality is refined but never stiff, knowledgeable but never pretentious, and personal without being overly familiar.
We want to build a team of individuals who are genuinely excited about restaurants — people who love eating, drinking, learning, and sharing those experiences with others.
This is an opportunity to join a chef-driven restaurant at a foundational stage and help shape its culture, personality, and reputation from the beginning.
