- Oversee the production of signature items, including our Legacy Sicilian Meatballs and hand made pastas.
- Manage strict food safety standards in accordance with Nassau County Department of Health (NCDH) guidelines, including precise cooling and holding procedures.
- Mnage a high-volume workflow, utilizing our 18ft hot cooking line (gas burners, stove, fryers, and charbroiler).
- Collaborate on seasonal "Pizza of the Week" features and upscale Chef-Select specials.
