Brought to you by the A16 Restaurant Group, Lucania is inspired by Southern Italian piazzas. It will be a gathering place where coffee turns into lunch, aperitivo into dinner, and the room fills as the day unfolds. Lucania becomes a place you can return to at any hour and find it alive, adding a sense of energy and gathering that the Ferry Building has not consistently held.

We are seeking an experienced Prep Cook with an innate sense of hospitality and genuine curiosity about the people, places, and traditions behind every bottle. Lucania's wine program will be rooted in Southern Italy while celebrating the extraordinary diversity of Italian wine.


We're looking for someone who can make wine exciting and approachable, whether introducing a guest to an indigenous grape they've never heard of or helping a longtime collector discover a new producer.

THE ROLE

Great service starts long before the first guest arrives.


As a Prep Cook at Lucania, you'll help build the foundation of the kitchen each day, preparing ingredients and components that allow the team to execute consistently and efficiently throughout service.


You'll work closely with culinary leadership and the rest of the kitchen team to complete daily production while maintaining Lucania's standards for quality, organization, cleanliness, and food safety.


We're looking for someone who understands that prep is about more than completing a list. Precision matters. Organization matters. How ingredients are handled matters.

WHAT YOU WILL DO

  • Complete daily prep and production lists accurately and efficiently.
  • Prepare vegetables, proteins, sauces, dressings, stocks, and other menu components in accordance with Lucania's recipes and standards.
  • Wash, peel, cut, portion, measure, and organize ingredients for daily production and service.
  • Follow recipes carefully to ensure consistency in flavor, yield, portioning, and quality.
  • Practice proper knife skills and safe handling of kitchen tools and equipment.
  • Weigh and measure ingredients accurately.
  • Label, date, store, cool, and rotate products in accordance with food safety standards.
  • Follow FIFO procedures and communicate product levels to culinary leadership.
  • Minimize food waste through careful preparation, proper storage, and respect for ingredients.
  • Maintain a clean, organized, and sanitary workstation throughout the shift.
  • Properly clean and care for kitchen equipment and tools.
  • Communicate clearly with chefs and other team members regarding prep levels, product quality, shortages, and production needs.
  • Assist Line Cooks and other kitchen stations as needed.
  • Receive deliveries and assist with proper product storage and organization when required.
  • Complete opening, closing, and cleaning responsibilities according to kitchen standards.
  • Contribute to a kitchen culture built on respect, accountability, collaboration, and pride in the work.

REQUIRED QUALIFICATIONS

  • 1+ year of professional kitchen or food preparation experience preferred.
  • Strong knife skills and understanding of basic cooking and preparation techniques.
  • Ability to follow recipes, prep lists, and production schedules accurately.
  • Strong organizational and time-management skills.
  • Excellent attention to detail and consistency.
  • Genuine interest in Italian cuisine; knowledge of Southern Italian ingredients and cooking is a plus.
  • Ability to work independently while remaining an engaged member of the kitchen team.
  • Understanding of proper food handling, storage, labeling, and sanitation practices.
  • Ability to prioritize tasks and maintain quality while working efficiently.
  • Reliable, punctual, and prepared to work as scheduled.
  • Current California Food Handler Card or ability to obtain prior to start.

THE DETAILS

  • Full-time and part-time positions available.
  • Hourly, non-exempt position.
  • San Francisco, CA · In-person.
  • Availability for mornings, evenings, weekends, holidays, and special events may be required based on scheduling needs.
  • This position requires standing and walking for extended periods, frequent bending, reaching, lifting, pushing, and pulling, and the ability to lift up to 50 pounds.
  • Work is performed in a fast-paced commercial kitchen with exposure to heat, sharp equipment, and varying temperatures.
