Line Cook

Cook with Purpose. Respect the Ingredient. Be Part of the Piazza

Exceptional opportunity to work for Lucania, a new and unique piazza-inspired restaurant opening at the Ferry Building in Fall 2026.

Brought to you by the A16 Restaurant Group, Lucania is inspired by Southern Italian piazzas. It will be a gathering place where coffee turns into lunch, aperitivo into dinner, and the room fills as the day unfolds. Lucania becomes a place you can return to at any hour and find it alive, adding a sense of energy and gathering that the Ferry Building has not consistently held.

We are seeking an experienced Line Cook with an innate sense of hospitality and genuine curiosity about the people, places, and traditions behind every bottle. Lucania's wine program will be rooted in Southern Italy while celebrating the extraordinary diversity of Italian wine.

We're looking for someone who can make wine exciting and approachable, whether introducing a guest to an indigenous grape they've never heard of or helping a longtime collector discover a new producer.

THE ROLE

As a Line Cook at Lucania, you'll be an essential part of bringing our food and vision to life.

You'll work closely with our culinary leadership and fellow cooks to consistently, efficiently, and with attention to detail prepare and execute dishes. This is a hands-on role for someone who understands that a great kitchen depends on preparation, communication, cleanliness, and respect for the entire team.

We're looking for cooks who want to learn, contribute, and grow, people who take their work seriously without taking themselves too seriously.

WHAT YOU WILL DO

  • Set up and maintain a clean, organized, and fully stocked service station.
  • Prepare and execute menu items according to Lucania's recipes, portioning, presentation, and quality standards.
  • Work efficiently and with urgency during high-volume service while maintaining consistency and attention to detail.
  • Prepare daily mise en place according to production and prep lists.
  • Communicate clearly with chefs and fellow team members throughout preparation and service.
  • Maintain proper food handling, storage, labeling, cooling, and rotation procedures.
  • Follow FIFO and waste-control practices to protect product quality and minimize waste.
  • Maintain a clean and sanitary station throughout the shift and complete all opening and closing responsibilities.
  • Properly use, clean, and care for kitchen equipment and tools.
  • Receive feedback with professionalism and apply it to continuously improve.
  • Support other stations and team members when needed.
  • Contribute to a kitchen culture built on respect, accountability, collaboration, and pride in the work.

REQUIRED QUALIFICATIONS

  • 1–2+ years of professional kitchen experience preferred.
  • Experience working a station in a high-volume restaurant environment.
  • Strong knife skills and understanding of fundamental cooking techniques.
  • Genuine interest in Italian cuisine; knowledge of Southern Italian cuisine is a plus.
  • Ability to follow recipes and maintain consistent quality and portioning.
  • Strong organizational skills and attention to detail.
  • Ability to communicate effectively and work collaboratively as part of a team.
  • Understanding of proper food handling and sanitation practices.
  • Ability to remain focused and organized in a fast-paced environment.
  • Current California Food Handler Card or ability to obtain prior to start.

WHAT SETS YOU APART

  • You take pride in the details, even when no one is watching.
  • You respect ingredients and hate unnecessary waste.
  • You stay organized because you know a clean station makes a better cook.
  • You move with urgency without sacrificing quality.
  • You communicate instead of letting problems build.
  • You want to understand why we do something, not just how.
  • You help the cook next to you because you understand that service succeeds as a team.
  • You're curious about Southern Italian food and excited to keep learning.

THE DETAILS
