Legacy.The General Manager is responsible for the overall leadership, operational performance, and financial results of a three-concept hospitality venue consisting of Big Bob's Bowling, Smoko Loco, and Glory Roll Sushi Bar.
This role requires a highly capable, hands-on operator who can balance service excellence, people leadership, and disciplined execution across multiple service styles under one roof.The General Manager serves as the senior on-site leader, accountable for guest experience, team performance, cost control, compliance, and brand standards. Success in this role requires strong judgment, organizational discipline, and the ability to move fluidly between entertainment operations, casual food service, and high-end dining and beverage execution.Core Responsibilities:Operational LeadershipOversee daily operations across all three concepts, ensuring consistent execution and guest satisfactionMaintain brand standards, service expectations, and operational flow across bowling, food, and beverageEnsure facilities, equipment, and systems are maintained to company and safety standardsAct as the primary escalation point for operational issues and guest concernsPeople Leadership & CultureRecruit, hire, train, develop, and retain management and hourly teamsEstablish clear expectations, accountability, and performance standardsCoach managers and key leaders through regular check-ins and performance reviewsFoster a culture of professionalism, hospitality, and teamwork across all conceptsFinancial Performance & ControlsOwn P&L performance, including labor management, COGS, controllables, and profitabilityBuild and manage schedules aligned with business demand and labor targetsMonitor sales trends, operational metrics, and guest feedback to drive improvementSupport inventory controls, cash handling, and loss prevention practicesGuest ExperienceEnsure a seamless and elevated guest experience across all touchpointsLead by example on the floor, especially during peak periodsResolve guest issues promptly and professionallyMaintain strong service pacing and flow between bowling, bar, and dining experiencesConcept Integration & ExecutionCoordinate operations between Big Bob's Bowling, Smoko Loco, and Glory Roll Sushi BarEnsure proper communication and collaboration between culinary, bar, and service teamsSupport specialty programming, events, and peak-period executionBalance volume-driven service with high-touch hospitality where requiredCompliance & SafetyEnsure compliance with all local, state, and federal regulationsMaintain food safety, alcohol service, and workplace safety standardsEnsure required certifications (food handler, alcohol service, etc.) are currentUphold cleanliness, organization, and inspection readiness at all timesQualifications· 5+ years of General Manager or senior leadership experience in hospitality, entertainment, or food & beverage· Proven experience managing multi-revenue-stream or multi-concept operations· Strong understanding of labor management, cost controls, and P&L accountability· Experience leading both FOH and BOH teams· High level of organization, professionalism, and decision-making ability· Comfortable working nights, weekends, and holidays as business demandsPreferred Experience· Experience with bowling, entertainment venues, or hybrid hospitality concepts· Background in bar-driven or chef-forward operations· Experience working alongside tipped culinary or bar teams· Familiarity with high-touch guest service environments**This job description provides a general outline of the responsibilities and expectations associated with the role.
