The Dishwasher is a critical member of the Back-of-House team at Tacombi. This role is responsible for maintaining the cleanliness, sanitation, and organization of all kitchenware, service equipment, and back-of-house spaces. The Dishwasher ensures that the kitchen has the tools and clean work environment necessary to consistently prepare and serve high-quality food.

- Wash and sanitize all dishes, utensils, cookware, and equipment according to Tacombi standards and health regulations.
- Maintain cleanliness and organization of the dish area throughout the shift.
- Ensure proper operation, cleaning, and chemical usage for dish machines and sanitation equipment.
- Follow all food safety and sanitation guidelines, including safe handling of cleaning chemicals.
- Support kitchen prep and cooking teams by ensuring timely availability of clean tools, pans, and equipment.
- Take out trash, recycling, and compost at designated times; maintain clean and organized waste areas.
- Assist with sweeping, mopping, and general BOH cleanliness, including storage rooms and prep areas.
- Notify leadership of any maintenance needs, equipment issues, or supply shortages.
- Maintain proper storage and organization of all clean dishes and equipment.
- Follow all procedures for closing or opening dish areas, depending on shift responsibilities.
- Assist with receiving and organizing deliveries as needed.
- Uphold Tacombi standards of cleanliness and support operational consistency.
- Communicate effectively with the Principal Taquero and BOH team to prioritize dish flow and operational needs.
- Demonstrate a positive attitude and support a respectful, collaborative kitchen culture.
- Assist teammates when the kitchen is busy, showing initiative and ownership.
- Ability to work in a fast-paced kitchen environment.
- Strong attention to cleanliness, sanitation, and detail.
- Ability to follow safety guidelines for chemicals and kitchen equipment.
- Reliability, punctuality, and a strong work ethic.
- Ability to communicate effectively with the BOH team.
- Bilingual (English/Spanish) preferred but not required.
- Ability to stand and walk for extended periods during shifts.
- Ability to lift and carry up to 25 lbs regularly, and occasionally up to 50 lbs with or without reasonable accommodation.
- Ability to bend, stoop, reach, and perform repetitive motions necessary for dishwashing tasks.
- Comfortable working in environments involving heat, steam, moisture, and cleaning chemicals, with or without reasonable accommodation.
- Adequate vision, hearing, and manual dexterity to perform cleaning and dish-handling tasks safely, with or without reasonable accommodation.
