Position Overview
The Director of Meat Production oversees all meat production operations across Corfini facilities, ensuring consistent execution in production planning, labor management, yield optimization, food safety, quality, equipment utilization, and operational efficiency. This leader partners closely with Purchasing, Sales, Inventory, Food Safety, Maintenance, Warehouse, and Logistics teams to ensure alignment and continuous improvement.
Key Responsibilities
Production Operations & Performance
- Standardize production procedures across all facilities
- Lead daily production planning to maximize efficiency and fulfillment
- Improve yields, labor efficiency, throughput, downtime, waste, and product utilization
- Ensure staffing aligns with production volume and growth goals
- Build reporting systems and accountability frameworks
- Drive continuous improvement, automation, and cost‑reduction initiatives
- Support new product launches and operational expansion
Food Safety & Quality Assurance
- Maintain compliance with USDA, FDA, HACCP, SSOP, GMP, SQF/BRC, and all regulatory standards
- Ensure all products meet Corfini’s quality expectations
- Partner with Food Safety teams on corrective and preventive actions
Leadership & Team Development
- Lead and develop Production Managers, Supervisors, Leads, and hourly teams
- Foster a culture of safety, urgency, accountability, and operational excellence
- Set performance expectations and provide ongoing coaching
Cross‑Functional Collaboration
- Partner with Purchasing to optimize raw material utilization
- Support Warehouse & Logistics in inventory flow and fulfillment
- Collaborate with Maintenance on preventive maintenance for grinders, slicers, saws, patty machines, packaging equipment, conveyors, and refrigeration systems
- Align production schedules with Sales and Inventory teams
- Analyze and report on KPIs including yield, labor efficiency, throughput, downtime, order accuracy, waste, and giveaway
- Reduce aged inventory, trim losses, and shortages
- Support financial goals through labor optimization and waste reduction
Required Skills & Qualifications
- Proven leadership experience in production or manufacturing
- Extensive knowledge of meat processing operations and food manufacturing workflows
- Strong understanding of USDA, FDA, HACCP, GMP, SQF/BRC, and SSOP compliance
- Analytical mindset with the ability to interpret KPIs and drive corrective action
- Excellent communication, organization, and cross‑functional collaboration skills
- Experience managing multiple facilities in a fast‑paced environment
- Expertise in labor planning, yield optimization, and operational efficiency
- Proficiency in Microsoft Office and production/inventory management systems
Education & Experience
- Bachelor’s degree in Food Science, Operations Management, Business, Industrial Engineering, or related field preferred
- 7–10+ years of progressive leadership in foodservice meat production, food manufacturing, or protein processing
- Experience leading large teams in USDA‑regulated environments required
- Proven track record of improving productivity, performance, and food safety compliance
Physical Requirements
- Ability to work in refrigerated environments for extended periods
- Ability to stand, walk, bend, and move throughout facilities
- Ability to lift up to 25 lbs occasionally
- Ability to travel frequently between facilities
- Must comply with PPE, food safety, and plant safety requirements
- Flexibility to work hours aligned with production needs
