Cheese Curd OperatorMonitor and assist with the process of cooking and molding of cheese curds. Work with lab department to meet customer's expectations of cheese product.Job Duties and ResponsibilitiesAdjust temperatures cheese cook temps as needed for different recipesMold cheese to proper weights and shapesAdds correct amount of smoke flavoring to vats as requiredGrind and add rework to the tablesChange molds as neededSubmit sample for lab testingComplete production logs accuratelyEnsure correct vat separation from the cooker to the brineCIP the cookerPerforms table operator duties and covers them for lunch and breaksMaintain safe working conditions for employees and compliance with all state and federal regulations regarding health and safety issuesDedicate effort to safety as we expect every employee to leave work in the same condition as they arriveFollow all DFA good manufacturing practices (GMP) and work in a manner consistent with all corporate regulatory, food safety, quality, and sanitation requirementsExhibit the values and ethics of Dairy Farmers of America through honesty, discretion, and sound judgmentAttend required training, including but not limited to, Safety, GMP, Hazard Analysis and Critical Control Point (HACCP), and Safe Quality Foods (SQF)Adhere to all DFA Quality, Safety and GMP policies and procedures and report any nonconformityResponsible for monitoring and taking corrective actions when necessary for a critical control point as part of the plant HACCP planEnsure that all documentation is done correctly and turned in promptlyThe requirements herein are intended to describe the general nature and level of work performed by employee, but is not a complete list of responsibilities, duties, and skills required. Rate includes $1.00 shift differential for hours worked between 6 PM and 6 AM.
