Food Product Development Specialist
Position: Food Product Development Specialist
Responsible for the development, formulation, and commercialization of Korean food products, including soups, stews, sauces, and ready-to-eat meals, supporting both product innovation and manufacturing scale-up at Shinsegae Foods.
Key Responsibilities
• Develop and improve Korean food products from concept development through full commercialization and production launch
• Formulate and evaluate recipes using Korean culinary techniques while adapting to U.S. ingredients, manufacturing conditions, and regulatory requirements
• Conduct ingredient evaluation and identify suitable alternatives to ensure product quality, consistency, and cost efficiency
• Collaborate with customers and internal departments to develop customized products meeting flavor, nutritional, and labeling requirements
• Prepare production formulas, batch sheets, and manufacturing process documentation for commercial-scale production
• Conduct sensory evaluations and establish product quality standards including taste, texture, appearance, and overall consistency
• Optimize formulations to improve yield, production efficiency, and manufacturing costs while maintaining product quality standards
• Develop Nutrition Facts Panels and labeling information using ESHA Genesis R&D software in compliance with U.S. food labeling regulations
• Support retort food processing operations and ensure compliance with food safety requirements, including BPCS-certified process control standards
• Provide technical training and guidance to production personnel regarding Korean recipes, cooking methods, and product quality standards
• Coordinate cross-functional activities between production, quality assurance, purchasing, and sales teams throughout product development and commercialization
• Participate in evaluation and implementation of new food processing technologies and manufacturing equipment for production expansion and improvement projects
Requirements
• Bachelor’s degree in Food Science, Food Technology, or related field, or currently enrolled with expected graduation
• Knowledge of food product development, recipe formulation, and large-scale food manufacturing processes
• Understanding of U.S. food safety regulations and labeling requirements (FDA/USDA compliance preferred)
• Experience with ERP systems or food formulation software (e.g., ESHA Genesis R&D) preferred
• Strong analytical, problem-solving, and communication skills
• Ability to work effectively in cross-functional teams within a manufacturing environment
